Avoid metal utensils in the pan to protect the tin lining from scratches. Don't let the lining overheat, use butter as a guide and turn the heat down if it starts to smoke, and never heat the pan empty, always add oil or butter first. Hand wash only, and skip steel wool, which can scratch both the copper and the tin. If the handle develops surface rust, wipe it away with an oil-soaked paper towel. Compatible with gas, electric, and halogen cooktops.
