Why We Finally Recommend a Sharpening Tool
Sharpening is personal. Here’s why EDGY earned a place on our bench.
Sharpening is personal, and we have always treated it that way.
There are synthetic whetstones and natural ones, diamond stones, stone wheels, belt grinders, local sharpening services, and mail-in providers. Edge preferences vary too — sharpening angle, degree of polish, steel type all factor in. We have never believed in one-size-fits-all, and we have never promoted a particular sharpening tool. That position held for years.
Then David Wolke introduced us to EDGY.
EDGY is not a replacement for a full sharpening. What it does is keep any blade performing at its best between sharpenings — day to day, with minimal time and effort — while significantly reducing how often a full sharpening becomes necessary. For anyone who cares about their knives, that is a meaningful thing. Alongside a good leather strop, it is the daily habit that protects your investment in a great edge.

EDGY is the creation of David Wolke, an Austrian metalsmith, goldsmith, jeweler, and tool designer who developed it alongside his partners out of their own professional need. It is produced in small batches in Austria and Germany, and the care in its construction shows.
A weighted aluminum base with a powder-coated black finish sits on non-slip rubber feet, keeping EDGY secure and stable during use. The round ceramic rod rotates effortlessly to expose a fresh surface, and can be removed for cleaning in the sink or, eventually, replacement — though it is engineered for years of consistent daily use. It is a considered object, built to the standard you would expect from the people who made it.

We use EDGY at Eatingtools. It has earned a place on our bench, and our recommendation without reservation. We spent time with it before saying any of this, and we would not be writing this post if we did not mean it.
