New York bladesmith Greg Cimms delivers a stunning and versatile bunka chef's knife profile forged by hand from a homemade steel formula that sees high-polished 410 stainless steel atop a core, including razor-sharp cutting edge, of custom carbon damascus. Revealed in a head turning, wave-like pattern, the damascus with its dark etch seems to flow up and over the stainless steel, an illusion that masks what is in reality the opposite; convex, beautifully shaped, tall bevels that slim downward from a slightly rounded spine to a thin, hard edge made for all manner of daily meal prep. To complement the stunning blade is a handle of equal caliber, one which combines dyed and stabilized 'aqua' maple wood with rings of sterling silver and black G10, and capped at each end with sculpted carbon fiber. Comfortable and agile in the hand, a piece of culinary art as functional as it is aesthetically striking.
