The 203mm gyuto & 106mm mini santoku each boast thin, hard, laser-like blades in Benjamin's shici mai (7-layer) formula, with his trademark 'denty' finish toward the blade's spines. Beautiful and comfortable, handles of ancient bog oak are sculpted to Western profiles using a combination of gentle curves and flat facets, and finished with elegant end caps of solid titanium. The handles are removeable, and each knife includes a custom G10 saya.
