If you know James Oatley's work, you know that his blades move through ingredients like few others, and this build, in thin, hard, RWL34 high-performance 

stainless steel, with superb compound bevel geometry, a high-polished, razor-sharp edge, and needle-like tip, is a stunning example. The nuances of his grind, hollow from the rounded, polished choil forward to just above the tip, and then convex to a near zero edge, result in a balanced and powerful blade that chops on the board with ease no matter the density of the ingredient, while at the same time slicing with precision and care, whether preparing sashimi or delivering paper-thin vegetables to the platter. With weight nicely distributed and balancing flawlessly just in front of the handle, this piece is dressed in green dyed and stabilized maple with a single domed brass pin that allows for handle removal in the case of care and maintenance. A custom, quilted maple saya with brass pin is included.
