Dressed in dark, dense, and classic santos rosewood with a spacer of bog oak, our newest gyuto from French bladesmith Yanick Puig is one exceptional chef's knife for the busy kitchen. The blade is forged by hand from Yanick's well-loved combination of reclaimed iron and 135Cr3 high-carbon steel in traditional san mai construction. Low, elegantly finished bevels slim to a razor-sharp edge that stretches for 232mm / 9.1" from the 55mm tall heel. Paper thin at the tip for detail work, the blade, as expected from Yanick, is versatile and crafted with the utmost precision. In classic, octagonal wa-style, the handle is comfortable and offers balance and tactile control over this one-of-a-kind cutting tool.
