This simply elegant gyuto by Australian bladesmith Robert Trimarchi features a 200mm / 7.9" blade clad in pattern-welded iron and 15n20, with a core of 1.2519 carbon steel. The razor-sharp edge geometry and stunning kasumi finish are courtesy of specialist Lee Chew who refines the short primary bevels via a progression of Japanese natural stones. The aforementioned short bevels combine with a very thin, hard edge to create a versatile workhorse with weight, balance, style, and grace. The handle is comfortable and classic, sculpted from bog oak. Included is a custom buttero leather saya.
