From Maine bladesmith Nick Rossi, a tall, dark, and handsome chef knife in hand-forged 300-layer damascus steel with forge-finished flats and etched and polished bevels. Quite thin behind the 198mm / 7.8" edge, with a 64mm tall heel and balance point just in front of the blade's choil, the knife is wonderfully weighted and robust in the hand. An only slight distal taper and stiff spine lend themselves to kitchen workhorse utility in a design that also enjoys the aforementioned tall bevels and thin edge geometry, resulting in a very versatile tool for both chopping efficiency, and slicing precision. And for additional good looks and control in the hand, the handle is sculpted from dark, beautiful maple around a black linen micarta frame, fitted with a stepped-down titanium ferrule, itself with elegant finish and contouring, and capped with two stainless steel pins, and a center red micarta pin, the knife’s Ruby Eye.
