Spalted Tamarind Gyuto 260mm

If a chef knife can tug heartstrings, this exquisite piece from Dmitriy Popov does just that. A silky, hand sanded finish stretches the length of the 260mm / 10.24" edge, blanketing the 63mm tall honyaki blade with a soft, matte look. Superb yet subtle S-grind geometry adds to the excellent performance expected of Dmitriy's work. The W2 carbon steel is thin, sharp and hard at the edge at 64HRC. Spalted tamarind and Arizona Dessert Ironwood contrast nicely to form the exceedingly comfortable handle. A formidable tool in stature and aesthetic, it's a pleasure simply to be in its presence.
