From Bryan Raquin, coutelier of France's Auvergne region, comes 290mm of kasumi finished, whetstone sharpened, hand-forged san mai steel for all manner of slicing and carving. Wonderfully weighted with a balance point around 50mm / 2" in front of the handle, this chef's dream could not feel better in the hand. Bryan's usual 145sc ("super-clean") carbon steel edge with XC10 mild steel cladding is matched to his trademark burn oak handle, creating a kitchen knife that epitomizes clean style and function-driven design and build.
