A laser for the kitchen from Austrian bladesmith Benjamin Kamon, this 257mm / 10.1" gyuto brings tall, pronounced S-grind bevels to the cutting board for slices like never before. Forged by hand from clean, 1.2519 high-carbon steel and heat treated to a high 65 HRC hardness rating, the edge is sharp and thin and fast in the hand, with excellent food release resulting from the combination of convex and concave bevel sections. The blade's two-tone finish is complemented by a beautifully sculpted handle of masur birch with end caps of polished aluminum. A beautiful chef knife made for daily meal prep from a very talented artisan.
