Quilted Maple Gyuto 190mm

A kitchen workhorse from Vermont bladesmith Nick Anger. In this case, 'workhorse' from Nick means a light and fast blade with just enough material behind the edge to stand up to demanding cuts of all variety, and a thin, slightly flexible tip that maintains ample strength at the same time. We're calling this one a gyuto due to the blade’s profile and edge that does rock on the board, although less than some, combined with Nick’s take on an East-West hybrid handle, sculpted from dyed quilted maple with a spacer of black micarta. And of course, the mosaic damascus that forms the blade is absolutely gorgeous.
