The house-made, stainless-clad san mai blade formula is forged by hand and completed with textured, forged-finish flats and silky, hand-sanded satin bevels. Nicely convex in medium height, the primary bevels slim downward to a thin but tough edge that is hardened in-house and sharpened to a hair-popping finish, delivering the versatility required of both delicate slices, and demanding chopping tasks. Rounded throughout its length, the blade spine tapers subtly but steadily until the final inches, where it slims and drops to a low, pointed tip, perfect for detail work. Comfort and control over this 232mm / 9.1" cutting tool is provided by a shield-style wa handle of lovely curly mango wood with a bolster of bog oak.
