Shaped from homemade mosaic damascus, Joe Schrum of Halcony Forge has created an exquisite workhorse gyuto that features a compound S-grind and razor sharp edge. Named Pangea for the tightly intertwined and interconnected mosaic of its parts, the pattern in the etched and polished 1095 and 15N20 damascus complements the beautiful grain of the ringed gidgee octagonal wa handle. Tapering slightly and comfortably contoured, rings of bronze and black G10 complete the handle in which no detail is overlooked, much like the perfectly rounded and polished choil and spine of the blade.
