This remarkable knife by Charlie Ellis demands attention, respect, and a worthy feast. Forged in the mountains of North Carolina from house made, 13-layer steel, with six layers of carbon damascus cladding on either side of the 1095 carbon steel core, the integral blade is strong, elegant, and razor sharp, ready to slay brisket and anything else requiring unabashed slicing and carving. No less exceptional in both form and function is the handle, carved from a gorgeous piece of black and white ebony, with heirloom fit bronze and G10 spacers that have been mechanically fit with through-tang construction.
