Like layer upon layer of material that builds in silence to tell the story of time’s passage, densely packed layers of fabric are hardened with resin and turned into the handmade G-Carta material from which Straub sculpts the knife’s handle. A product of the family-run G.L. Hansen & Sons operation in Idaho, this modern micarta offers a rewarding tactile experience for the fingers and a one-of-a-kind aesthetic for the kitchen.

It’s the blade, though, that carries the piece. Its complex mosaic damascus pattern conjures fossils formed by that same passage of time, pressed within those same layers of earth. Through the tall, compound S-Grind bevels run two rows of tiled fossils, each set into its own distinct damascus frame. Along the thin, sharp, convex edge runs a bar of dancing flames damascus, reaching 240mm / 9.4" from heel to tip.

Slim, precise, and flexible throughout its length, the blade is shaped to become any chef’s versatile daily driver. It will turn heads and call attention to itself in the kitchen even at rest. From the faceted, forged integral damascus bolster, to Straub’s distal taper culminating at a fine, pointed tip, to the tool’s overall balance and the natural feel of the hybrid Western-wa grip in the hand, it is a knife to use every day, and admire for years to come.

//cdn.shopify.com/s/files/1/0735/1749/8643/files/chef-gyuto-salem-straub-washington-straub-sediment-mosaic-chef-240mm-1260414166.jpg?v=1792601779
