A long-time Eatingtools maker, Ellis directs much of his time toward teaching and supporting the next generation of metalworkers, so when he tells us a culinary tool is ready for a new home, we don't hesitate.

The 256mm / 10" blade is forged by hand from Ellis's moondrop damascus, its folds, twists, and turns seemingly organic in origin, shaped less by fire and hammer than by gravity and deep time. Polished and etched to reveal each densely packed layer, the symmetrical compound S-grind bevels give way to forge-finished flats that carry the three-dimensional texture of the lunar surface the pattern is named for. At nearly 6mm wide above the choil, the faceted spine tapers with deliberate precision: 4.3mm at the midpoint, 2.4mm an inch from the low, resolute tip. Balanced around one finger's width in front of the 60mm heel, the 14oz blade moves through the largest ingredients with the authority of something that was always going to end up in a serious kitchen.

The handle was made to be seen as much as held. A tapering piece of carved boxelder burl opens the grip, its grain catching light the way the sun refracts off a rocky surface at low angle. Bookended by rings of brushed titanium with stepped, heirloom fit, a ring of wrought iron fused with pure silver holds the center. Black Richlite completes the grip where the fingers rest, the whole assembly sitting in the hand with the settled weight of something built to last centuries.

Named Silver Moonlight. Built for the cook who has stopped compromising.

//cdn.shopify.com/s/files/1/0735/1749/8643/files/chef-gyuto-charlie-ellis-indiana-silver-moondrop-gyuto-256mm-1237574610.jpg?v=1778519140
