Oroshigane, or bloomery steel as it is called in the West, is created simply yet with great practice by combining iron and carbon in a one-time-use furnace often constructed of clay, mud, and peat. For this firing, Silas partnered with Eatingtools maker Emiliano Carrillo, an expert in traditional steelmaking techniques. With the raw ingredient realized, Silas took the reins in fashioning the material into a singular knife for the chef's kitchen.

Tall and fully convex, the blade's symmetrical bevels are honed with purpose and precision, slimming toward a thin, hard, razor-sharp edge. Tough enough for the most demanding cuts, the blade in the hands of an experienced cook handles big chopping tasks and the most delicate slicing work with equal conviction. A subtle distal taper along the 176mm / 6.9" spine maintains stiffness on the board, the steel narrowing to a fine, low, pointed tip that adds detail work to an already versatile repertoire. Etched and polished to a silky sheen, the alloy banding of the homemade steel reads like the dense layers of a damascus pattern, each one a record of the fire that made it.

Integral handle construction sees the oroshigane swell behind the blade's 42mm heel to form the bolster. Onto this smoothly finished stretch of material, Silas imbues his penchant for natural inspiration: fine silver, 24k gold, and copper form a ginkgo tree motif, its branch and leaves worked with the patience the subject deserves. A ring of textured fine silver separates bolster from a piece of Vietnamese striped ebony whose grain seems formed especially for this build. A single hand-hammered pure silver pin completes it.

A knife made from the ground up, in the most literal sense.

//cdn.shopify.com/s/files/1/0735/1749/8643/files/chef-gyuto-silas-blacklow-new-york-oroshigane-ginko-gyuto-176mm-1237847038.jpg?v=1778536181
