maple-medium-french-chef-130mm
Maple Medium French Chef 130mm

The season of Don Carlos Andrade's Medium French Chef continues, carrying the same hand-forged 26c3 'Spicy White' high-carbon steel and the same clay-less rainbow hamon revealed through a careful etching and polishing process. That finish alone has carried Andrade's reputation among collectors for close to twenty years.

This compact profile carries a 130mm / 5.1" blade with a 39mm heel, tapering in full distal fashion to a fine, needle-like point. The spine runs 2.7mm thick at the choil and narrows to 1.3mm an inch from the tip, ground down below to form convex bevels that slim into an edge that's thin, hard, and razor sharp. It's a compact knife built to handle everything a kitchen asks of it, with the precision a French profile is prized for.

Where the blade speaks to tradition, the handle makes it a one-of-a-kind: purple-hued maple, cut into Don's familiar silhouette of flat facets, gently curved faces, and a back-to-front taper with beveled edges throughout. Set into it is his signature touch, a circle inlay in translucent green, echoed in a matching sculpted ferrule where the handle meets the blade.

Overall, it measures 265mm / 10.4" and weighs 4.2oz / 120g, small enough to disappear into a quick task and sturdy enough to handle a full prep list. A custom cloth-covered saya is included.

//cdn.shopify.com/s/files/1/0735/1749/8643/files/utility-petty-don-carlos-andrade-california-maple-medium-french-chef-130mm-1260778507.jpg?v=1791478751
