This knife prepared two whole tuna dinners at Mads Refsland's Ilis in NYC, and carries subtle patination in a few places along the blade to prove it. Consisting of dozens of individual tiles of homemade damascus steel, each containing countless metallic layers and minute details, the blade is shaped by Casey for right-handed chefs, a single bevel on the blade's right face, and concave ura on the back face. The aforementioned geometry, traditional to a number of Japanese blades types designed for sashimi and seafood preparation, allows for the thinnest, sharpest possible edge and most precise slices of proteins, namely tuna in this case, and other seafoods. The handle, large enough for two-handed operation (the entire knife able to support two-person operation), is sculpted from koa wood, wrought iron, and bronze. In its finished form, 700mm \/ 27.6\" of razor-sharp edge are ready to cut upon delivery.\u003c\/p\u003e","brand":"Art of Cutlery","offers":[{"title":"Default Title","offer_id":54611853377811,"sku":"TAOC-11-MO","price":18000.0,"currency_code":"USD","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0735\/1749\/8643\/files\/the-art-of-cutlery-the-art-of-cutlery-hereafter-by-vilensky-47752638365971.jpg?v=1728557787","url":"https:\/\/eatingtools.com\/products\/hereafter-by-vilensky","provider":"Eatingtools","version":"1.0","type":"link"}
