He is also a world-class bladesmith. Ferguson is a fifth-generation farmer at Gubbeen in Cork, Ireland, where he specializes in charcuterie and cheesemaking among other organic endeavors — both prized, both award-winning. He also happens to be a talented knifemaker. When the opportunity arose to craft a singular knife together, they knew the project deserved a touch of extra flavor.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eAs Fletcher has done for past collaborations, the project began with beer. He formulated a Coolship Saison worthy of his colleague across the Atlantic, open-fermented on a rooftop coolship with saison yeast, picking up natural Alaskan flora in the cool night air, then transferred to oak foeders with brettanomyces for a long, slow, and complex fermentation, and for its third and final fermentation, naturally carbonated in the bottle. Named FINGAL, a small amount was sent 4,300+ miles to Cork, where Ferguson washed the rind of the curing wheels for several days, infusing the beer into the cheese. Two small-batch products anchored in and flavored by the natural environments and flora from where they come. \u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eThen, there is the knife. The Ganesha Damascus, inspired by the revered Hindu deity, is formed of 15n20 and 1080 high-carbon alloys. The billet compiled and profile shaped by Fletcher in Alaska, it traveled with the saison across the ocean. Ferguson honed the final bevel geometry, giving the 265mm \/ 10.4\" by 51mm blade a subtle compound S-grind, symmetrical on both faces, beneath a thin, hard, razor-sharp edge and above a rounded tapering spine that slims to a fine, pointed tip. The blade then made the return journey to Alaska for final polishing, sharpening, and assembly. Two handles are included: a black micarta grip capped with a carbon fiber bolster and pommel comes ready to use, and a second in Irish bog oak with an Irish-made wrought iron bolster and pommel on the side.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eTwo culinary pioneers at the forefront of their respective crafts — brewing, farming, forging, and curing — each operating at the edge of what their medium allows.
