Stock is limited.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eIn 1095 high-carbon steel, an alloy known as XC-100 or 1.1274 outside of the US, the XL blade carries approximately 236mm of razor-sharp edge to the cutting board, each blade differing slightly in true hand-forged fashion. Standing 65mm tall at the heel, this is a capable, hard-working tool built for real volume. Textured, forge-finished flats tell the story of each blade's hand-hammered origins, while belt-finished bevels below slim with symmetrical, convex geometry to a thin, hard, razor-sharp edge. The spine, rounded and polished like the choil, begins at 5mm out of the handle before tapering steadily to 2.3mm at the midpoint, 0.9mm an inch from the tip, and further still to a needle-like culmination. Moving nimbly yet steadily in the hand, that precise forging, purposeful grinding, and full-distal taper result in a beautifully balanced cutting tool. A touch of lateral flexibility in the final inches contrasts the powerful, robust feel at the back, producing one blade capable of the biggest ingredients and the most delicate work alike. As he's done with recent Living Steel models, Tomer handled this piece just for us: a handsome black handle pairs discs of leather and micarta with a brushed, solid brass bolster for comfort and control in his versatile, well-loved form.
