At 700 layers, the folding runs fine enough that the surface reads as chatoyant, shifting and catching light differently depending on the angle it's viewed from.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eStanding 52mm tall on the board, the blade carries the height a nakiri needs for full knuckle clearance over the board, narrowing from 2mm wide above the heel to a fine 1mm an inch from the tip for cuts that call for real precision. Light at 3.6oz \/ 102g on a 300mm \/ 11.8\" overall knife, it moves quickly and stays out of the way of the vegetables, its balance point a finger's width ahead of the choil providing a steady, grounded feel.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eTwo makers meet at a single seam.
