bob-kramer-edgeless-ladder-chef-222mm
Bob Kramer Edgeless Ladder Chef 222mm

The latest Kramer custom chef’s knife to feature in our collection has arrived. Ladder-pattern, high-carbon damascus steel. Handle in Arizona desert ironwood, bolster and pins in brass, capped with Bob's trademark mosaic pin. An estimated date of 2009 or 2010; the year is not confirmed.

The house-made damascus pattern instantly calls the kitchen to attention. Rungs of contrasting alloys, set at a near-perfect right angle to the edge, course through the blade's bevels with stellar precision. As striking as any ladder pattern billet we have seen from Bob. The result has a chatoyance to it, a shift and shimmer as the blade catches light and turns, depth that a simpler pattern simply doesn’t hold. Forged, as with all Kramers, by Bob's hands one blow at a time at his Bellingham, Washington studio.

Bob refreshes every pre-owned knife that comes to Eatingtools before it is offered for sale. This one passed through his hands as well. Bob has never sold through a shop, Eatingtools included; every Kramer knife begins life sold direct. Given our close relationship with Bob, knives are only offered here once he has personally refreshed them from tip to handle.

Making this build especially unique, the edge was left purposefully unfinished. As is often appreciated by a chef who treats their knife like an extension of the hand, the exactness of the finished secondary bevel is left to personal preference. Some may prefer symmetrical edge geometry, while another chef relies on a 70/30 edge for their cutting style. Some demand a silky smooth edge finished to a 12,000-grit high-polish on natural whetstones, while the next would rather cut with a toothier, grittier edge. In spite of having never been sharpened, the symmetrical, convex primary bevels taper to a thinness capable of real cutting as they stand, albeit with a rather toothy bite. An unfinished edge also means an unused knife. Condition: as new.

Setting this singular piece apart further still: a 222mm / 8.75 inch classic Western profile. A length rarely seen in Kramer custom chef knives, exact and deliberate. Enough blade for serious cuts in the largest kitchens, while versatile and light enough to move with speed in compact workspaces.

Certificate of Authenticity from the Kramer Knives included.

//cdn.shopify.com/s/files/1/0735/1749/8643/files/chef-gyuto-bob-kramer-bob-kramer-edgeless-ladder-chef-222mm-1260689445.jpg?v=1791759576
