To do so to such exacting standards and so lustrous a finish as bladesmith Jeroen Knippenberg of the Netherlands has done here is rarer still. We have decided, then, to name this, and the Heimskringla Mango Chef 178mm, for their Damasteel pattern names.

The damascus, made at the same small, specialty forge in Sweden that has been producing steel steadily since the late 1600s, is prized not only for its performative attributes on the cutting board, but also its low-maintenance, stainless quality that goes hand-in-hand with a stunning multi-alloy pattern that won’t fade while it wows passers-by for years to come.

But enough about the material itself. What Knippenberg has done with it is the real story: forged by hand, the blade provides 192mm / 7.6" of especially thin, hard, razor-sharp edge beneath precise and dynamic convex bevel geometry. Making it dynamic, as we call it, is assistance from the blade spine’s pronounced full distal taper, which slims from 4mm+ out of the bolster, to 2.1mm at the midpoint, and further still to barely 0.8mm one inch from a glass-thin tip that practically disappears before the eyes. These features together mean that the edge geometry in the rear is versatile yet tough, ready for the most demanding work, while the geometry in the forward stretch thins in all directions, the convexity becoming less, so that delicate slicing work is done with uninhibited control. Yet, virtually no lateral flexibility is present.

Finally, the Bluetongue pattern, with its exciting, sometimes chaotic energy, is brought out through Knippenberg’s deep etch and stunning polish. Through the handle’s forged integral bolster, the pattern is enjoyed under a different lens. The fingers hug the gently sculpted bolster in the pinch grip to no shortage of comfort, while the rest of the hand is supported by a breathtaking piece of Arizona desert ironwood, fit to the steel with an heirloom’d step, and carved into a hybrid Western-wa profile. In this kitchen heirloom, no detail goes unnoticed.

//cdn.shopify.com/s/files/1/0735/1749/8643/files/chef-gyuto-jeroen-knippenberg-netherlands-bluetongue-ironwood-chef-192mm-1260414161.jpg?v=1792609093
